The Refectory Operating Group

Our operating group consists of local business owners Kenneth Kearns (of 118 North), Chris Perella (of Ardmore Music Hall & 118 North), and owner & acclaimed Chef Biff Gottherer (of Ripplewood).

Chef Biff Gottehrer is the Director of Culinary & Hospitality at The Refectory. He has worked in top Philadelphia kitchens, including The Dandelion and El Vez, and currently leads the kitchens of Ripplewood, 118 North, and Ardmore Music Hall.

In addition to operating The Refectory, Kenneth Kearns owns 118 North, a bar, restaurant and music venue in Wayne. Ken specializes in commercial real estate leasing and commercial real estate development. He is also an active musician and a co-founder of Music is Love Foundation, a charitable organization that supports children’s medical causes, and is the director of the annual Wayne Music Fest. Ken received his Bachelor of Science in Business Administration from Villanova University (Class of 1992) and lives in Wayne with his wife and four children.

Our Beverage Director, Michael Haggerty, honed his skills for almost a decade opening and working at some of Philadelphia finest cocktail destinations including the Four Seasons Hotel, Wm. Mulherin’s & Sons, a.bar, Spice Finch, and Ripplewood. Michael works closely with our Bar Manager, Brian Azevedo, whose equally impressive resume includes Charlie was a sinner, K’Far Café, and Spice Finch. At the Refectory’s central horseshoe shaped bar, guests may enjoy craft cocktails, thoughtful wine and beer selections, and zero-proof mocktails.
